Garnish 1–2 spring onions, chopped A drizzle of sesame oil (optional) Instructions 1. Rinse the rice two to three times until water runs mostly clear. Optional: Soak rice in water for 20–30 minutes for softer, fluffier texture. 2. Slice the lap cheong and waxed pork/duck thinly. If using cured pork belly, briefly blanch in boiling water for one to two minutes to remove excess salt and oil, then drain. 3. Add rice and measured water to the rice cooker. Stir once to level the rice. 4. Add waxed meats and arrange sliced lap cheong and waxed pork/duck on top of the rice. Do not mix. Let the flavours infuse during cooking.
Waxed Meat Claypot Rice in Rice Cooker ( Lap Mei Fan ) Ingredients 1½ cups rice 1¾ cups water (adjust slightly depending on your rice cooker) 80g–100g lap cheong (Chinese sausage), sliced diagonally 80g–100g Chinese waxed duck or cured pork belly, thinly sliced Sauce 1½ tbsp light soy sauce 1 tsp dark soy sauce (optional, for colour) ½ tsp sugar ½ tsp sesame oil 2 tbsp water
5. Close the rice cooker lid and start the regular cooking cycle. When the rice cooker switches to “warm”, leave the lid closed for an additional five to 10 minutes for the rice to finish steaming and absorb flavours. 6. While rice cooks, mix light soy sauce, dark soy sauce, sugar, sesame oil and water in a small bowl. Adjust to taste (slightly sweeter is traditional). 7. Serve the dish by drizzling the sauce over the rice and gently mix the rice and meats. Garnish with chopped spring onions and a tiny drizzle of sesame oil if desired. Optional: If you want a “crusty bottom” like in a claypot, press the rice lightly against the bottom of the cooker after cooking and leave on “warm” for five to 10 more minutes.
